This recipe is perfect for a nice summer night dinner. There’s nothing like a tasty perfectly grilled vegetable. Whether you are preparing it as a side dish or a main course, this recipe won’t disappoint. Rich in sesame flavor with a hint of lemon, a grilled cauliflower steak will surely satisfy your appetite.
Ingredients:
• 1 large head of cauliflower
• 3 tablespoons of olive oil
• The juice of 1 large lemon
• 1 cup of tahini sauce
• 1 cup of chopped cilantro
• 1 cup chopped parsley
• 2 tablespoons of salt
• 1 tablespoon of black pepper
Directions:
In a large bowl, combine half of the parsley and half of the cilantro along with all other ingredients and whisk together. Put the remaining parsley and cilantro to the side for later. Remove the leaves from the cauliflower then cut off the stem end so that you have a flat base and can stand the cauliflower up on a cutting board. Cut the head into thick “steaks.” Any smaller pieces that fall off just put aside, you can grill them too or save them for another time. With a grill basting brush, coat one side of the cauliflower with the mixture. Heat a grill to medium (about 350 degrees F). Brush one side of each cauliflower steak with the tahini mixture and place the sauced side down on the hot grill. Cover the grill and let cook for 5 to 6 minutes, until you see nice grill marks on the cauliflower. Flip the cauliflower, then brush the remaining tahini mixture and re-cover the grill and cook 5 additional minutes, until the cauliflower is tender and that side also gets those grill marks. Remove from the grill. Sprinkle with cilantro and parsley. Enjoy!
