So just a few days ago we celebrated my youngest daughter turning 6 months old! Of course, I love any excuse to celebrate my kids so I wanted to have a small family get together with just a few people. I didn’t want to do the whole dinner ordeal just something small with a variety of finger foods and snacks. I had a few ideas in mind but since it’s the summer season I wanted to keep it light & fresh. I decided on making a salsa, but jazzed it up a bit. This sweet grilled corn salsa was a hit and so easy to make with all the freshness of summer in every bite! I served it with two types of tortilla chips and some mini pitas. This recipe could also make for an AMAZING topping on grilled fish or chicken. Next time i will add some jalapeño and mango to pack even more of a punch! Tasty and versatile. Enjoy!

Ingredients:
• 3 ears of corn. Grilled until slightly charred
• 2 large avocados cut into small cubes
• 2 limes
• 1/2 cup cilantro
• 1/2 small red onion
• 1 can of Goya black beans
• 4 mini bell peppers any color of your choice
• 1/4 cup of sour cream
•Salt & pepper to taste

Directions:
• Cut off all of the ends of your ears of corn. Standing the corn vertical on one of the flat sides, carefully slice your kernels off.
• Chop up your cilantro, mini peppers & onion.
• In a large bowl combine all of the ingredients. Squeeze the juice of two limes into the bowl. Salt & pepper. Mix well. Serve it up with your choice of chips, And that’s it! Yes, it’s that simple. 👍🏼
